Gazpacho

May Madness!!!  31 Recipes in 31 Days!!!! Recipe 7.  This recipe is easy, and sooo close to the traditional recipe it’s hard to call my own.

Gazpacho

Gazpacho

1 1/2 cup tomatoes (Plum)- Diced
1 small cucumber (Persian)- Peeled, Seeded, and Diced
1/4 bell pepper- diced
1 clove garlic
1/4 cup olive oil*
1 tbsp raw coconut vinegar
1/2 tsp salt- to taste
1/4 tsp cumin

Garnish
cucumber-diced
yellow bell pepper-diced
red bell pepper- diced
orange bell pepper- diced
red onion- diced

Placed all ingredients (except garnish) into a blender or food processor and blend until desired consistency.  Pour in a glass or bowl and chill in fridge for a few hours.  Add garnish and enjoy!
