Peaches are in season here in sunny California. I had the pleasure of picking up some fresh organic peaches at the Mar Vista Farmer’s Market. It’s one of the best Farmer’s Markets in LA that I have visited. I really recommend everyone check out their local Farmer’s Market. It’s like going to the grocery store on sample day. You can try just about anything, and it’s so fresh!! Plus, vendors are from local farms. You can’t get any fresher than that unless you are growing it your self!!
So I decided to try my first attempt at making Peach Pie. I was not disappointed. This dessert is to die for!! And with only 6 fresh and natural ingredients this won’t disappoint the scale either.
1/4 cup pecans/walnuts- soaked 4 hours
Directions- Slice 3-4 peaches. Carefully de-skin by either gently peeling or slicing off peel. Place skins in airtight container to juice later. Set aside the other 1-2 peaches to juice later as well. Place sliced peaches in dehydrator and set temp at 104 degrees. Let dehydrate for 8-10 hours.
Soak your pecans/walnuts for 4 hours. Drain and place in food processor with 6 pitted dates. Process until evenly mixed. This does not need to be smooth, just not too chunky. Use a cupcake pan or other mold. I like to turn my cupcake pan upside down and mold my crust around the outside of the cupcake mold for easy removal and bigger center. Place in dehydrator for 4-6 hours.
Once peaches are dehydrated start juicing the last of the peaches skins, and peaches you set aside. In a glass bowl place dehydrated peaches and juice together and return the mixture to the dehydrator. You can also remove your crust from the mold and continue to dehydrate. Both will need to be dehydrated for 8-12 hours until crust is dry, and filling is thick.
Once everything looks thick and gooey, bust out the coconut. Carefully open the top with a meat cleaver or Coco Jack. If you have a meat cleaver make a square on the top of the coconut. Drain the water to drink or use later and scrape out the coconut meat. Place coconut meat in a food processor with a little bit of coconut water and process for up to 10 minutes. This takes a while, so be patient. You want it to be creamy and whipped, so it takes a bit of effort. Once creamy and whipped add vanilla and coconut nectar if you like. Blend again for about a minute.
Finally! Assemble your pie. Take the crust and scoop in the peaches filling. Then add a dollop of coconut creme on top. All that work!! Now you can ENJOY!!!
Summer is just around the corner. Time to get out that old bikini and flip flops. Here is a recipe that is both simple and delicious. Don’t feel guilty about this raw treat because if contains only 3 simple ingredients: Bananas, Blueberries, and a few Dates. Eat yourself into shape this year!
4-5 frozen bananas
1/4 cup blueberries
Directions: Freeze bananas in peel. Once frozen very carefully slice off the peel (be very very careful). Cut into three of four chunks and place in a high powered blender. Add blueberries and dates. Blend using ice cream settings, or any low setting, scraping down the sides of the blender when needed. Once the mixture is smooth dish and serve.
Serves 2-3 people. Store uneaten ice-cream in freezer until later use.
I’ve been craving cake a lot lately, so I decided to whip up my first watermelon cake. You can eat the whole thing and feel bad at all.
Ingredients & Directions:
1 cup coconut shreds
1/2 cup water
2 tbsp coconut nectar
1 tbsp maca powder
2 tbsp cocoa
Blend coconut with water, coconut nectar, maca powder, cocoa together for about 2 minutes. Strain liquid into container and set pulp aside for another recipe, or dehydrate for later use. Next blend chocolate liquid with the avocados until whipped and smooth. Set in fridge an let chill.
1 small seedless watermelon
Slice both ends off watermelon. Then carefully slice around the rind to create round cake shape. Shave sides and ends to desired shape. Place scraps aside to juice or use in another recipe.
1/2 cup strawberries
De-stem and slice strawberries. Set aside to dress the cake.
Once you have everything prepared take and knife and frost the watermelon cake. Once the cake is evenly covered garnish the top and sides with the slices of strawberry. Slice and serve!
Here’s a simple recipe for Raw Strawberry Cheesecake!
1/2 cup Pecans (soaked and dehydrated)
1/2 Orange (juiced)
1 cup fresh strawberries
1/2 cup soaked almonds (overnight)
1/4 cup water
Put the ingredients for the crust in a food processor. Process until evenly mixed. Scoop into bottom of dish or pan. Place in freezer. Next take you strawberries and pour them into a high powered blender. Blend until smooth. Add almonds and blend adding water until smooth. Pour on top of crust and put in freezer for three hours or until ready to eat. For best experience, let thaw for 1/2 hour before enjoying.
So this post is going to be a little bit different than usual. Why? Well, because life happens. My dad gave me the best advice today about utilizing our time. We all have 24 hours in a day. That is how we are all the same. All of us. I’ve always been a little angsty, a little melodramatic, and maybe a little overly passionate. Some might just call me crazy. Either way I know how it feels to be happy, and I know how it feels to be sad. I prefer happy, as I’m sure we all do. So how do we do this? How do we make ourselves happy? This is a question I am pondering now, and I don’t have the answer. However, over the last few months I’ve gone through some major life changes and self-realizations.
We have to take care of ourselves- Transitioning into a raw foods lifestyle was the best thing I’ve ever done for myself. Sometimes I screw up, and that’s O.K. It’s easy to correct the mistake and get back into getting those fruits and veggies all day everyday. I didn’t become a raw foodist over night, but I don’t even remember getting real joy from eating processed junk food. Dead food is what I’d like to refer to it from now on. That goes for anything highly processed. It’s all bad. It made me feel bad. It made me fat. It made me sick. It controlled my life. It led to me doing crazy diets and pills. These things made me miserable. Now, I can’t even tell you the last time I was sick. I feel energized and happy when I eat raw, so it’s an important thing in my life. I won’t let time, money, or anything keep me from eating fresh organic/non-GMO foods.
We have to exercise- Maybe it’s the gym, or running, or cycling. For me its yoga. I did a yoga challenge last month. I did 30 classes in the month of March. It was definitely a challenge. Between the new job I started and the fact that I now travel by bus, it was definitely a challenge. And I did it! I finished by the 29th with two days to spare. I really won that challenge for sure. I’ve always dabbled in Yoga since I’ve been in LA, but to really do it as a real yogi. Someone who made a real practice almost everyday. Some days I couldn’t go because of work, so I’d double up on classes on my days off. Some days towards the end of the month, I had to do 3 classes a day. It was amazing. It’s normal for people to spend 3-4 hours in the gym, so hows yoga any different? Throughout my day I constantly thought to myself how I’d rather be doing yoga. Time management is important, so like my dad told me today, he used to run everyday. I’m pretty sure 52 miles a week. He was a true runner and he had to work two jobs. My dad told me he would run at 5:30 in the morning or at 10:30 at night in order to give us the life we had, and still make it to me and my sisters sports games, and gymnastics meets. I must use the same practice and continue to do yoga everyday, no matter how much I have going on. You see, I did my yoga challenge, and then I got busy. I haven’t done a yoga class in over a week, and I feel terrible. I’m just so happy that it’s an easy fix. There is still this evening, and tomorrow is a new day to stay on track.
We have to have friends and family- Without friends and family, what are we living for? I come from the perfect family. My mom and dad are going to have been married I think 41 year this summer. They take dance lessons and play golf. I feel so blessed and not just blessed, but super lucky that my parents never fought. Not in front of me and my sister at least. They were a team. They supported me and my sister and still do to this day. My dad drove with me out to California. He drove his baby girl halfway across the country to live her crazy dreams. I haven’t seen my parents in almost 2 years, and I miss them everyday. I hope I can be at least half as good of a parent as they were to me someday. It’s important if you are living your life away from your family that you make a second family of good friends. When I came to California, it was just me pretty much. I had to make all new friends, and it was the first time I got to make all my own decisions and find people who were really interested in the same things I was. If it weren’t for my friends and if it weren’t for my family, I couldn’t be living my dreams. I wouldn’t want to. It’s a lonely world, and when you find people who make you shine, you hold onto them, and you don’t let time or distance keep you from seeing them or talking to them.
We have to manage our time- The one thing we all have in common is that we each have 24 hours a day. We have to make choices in life. I choose to live. I’m going to do things that I love and if I don’t love it, I’m not going to do it. I don’t care what it is. If you hate your job, quit. Wait until you find a new one, or build a savings nest, but if you don’t like you job, or your boss, quit. I promise it might be scary at first, but you will find something if you stay positive. You don’t have to hate your job. You don’t have to be unhappy with your life. It’s you! You have time to change. Your most valuable asset is time. I want to spend more time living and less time updating my Facebook status. I don’t want to waste time researching people who haven’t stayed in touch, or I haven’t spoken to in 6 years. I would rather spend my time making fresh food and finding new hobbies and spending time with people who are important to you.
So enough chit chat and lets get down to business: Raw Split Pea Soup
1 cup fresh peas (frozen if you don’t have fresh)
2 celery stalks- diced
1 Tbsp diced carrot
1 Tbsp onion
1 clove garlic
1/2 lemon juiced
1 tsp salt
1 tsp cumin
1 tsp pepper
1 cup purified water
Since we are on the subject of time management, I feel this recipe is perfect. The thing that will take the most time is shucking the peas. Once peas are shucked, dice your carrots, celery, onion and garlic, pour that and 1 cup purified water into a blender with the salt, pepper, lemon, and cumin. Use a high powered blender and blend soup until smooth. Pour in a bowl and garnish with some parsley. It really tastes like split pea soup and fills you right up.

Today I went looking for fruit. One of the best things about living in Southern California is the street fruit. I’ve been watching a lot of Dual Survivor and it got me thinking. I could use basic survival skills to save money on some of my favorite fruits!!!
Here were the rules we followed:
1. Stay out of the neighbors fenced in yards: We only pick fruit from trees on public property or hanging over fences or walls.
2. If it looks like someone’s personal garden… leave it be as well: If you stand and stare at it long enough someone might come out and offer you some.
3. Don’t eat things you can’t identify: You don’t want to poison yourself…
In a mile in a half radius from my house, we were able to collect the following:
Lemons. +Meyer Lemons
We also managed to find Kumquats, Loquats which I put into a fruit salad with Pomegranates.
We also found some Pomelo grapefruits, and limes…
It took us a few hours to collect two bags of fruit, saving us close to $25 at least! Freshest thing you can eat!!!
So it’s been a while since I’ve posted any recipes. I’m going to do my best to keep up and post a few recipes a week. This one has got me really excited! Not only is it super easy, delicious, and inexpensive… It’s pretty eco-chic as well! **Note the lime peel bowls** These babies are made with only five ingredients:
1 inch vanilla bean
Step One: Coconut Cream
*BE CAREFUL* Use a meat cleaver (KitchenAid 6″ Stainless Steel Cleaver with Sheath – Black)
and break open on top. Strike top of coconut to create an opening. (I make a square) Pour coconut water in a glass Mason Jar for later use. Next use the meat cleaver to break coconut in half. Once again… BE CAREFUL! Scoop out the meat and run through your Champion Commercial Juicer G5-PG-710 – WHITE MODEL along with one date. If you do not have a Champion Juicer, use your food processor and blend the coconut and date until smooth. This process will take 5-8 minutes, so keep processing until completely smooth. Then stir in vanilla until evenly mixed. Pour into a candy mold and put in freezer for one hour.
Once you have your lime bowls filled, take the coconut creams out of the freezer. Top each dessert with a heart shaped, or whatever shape you choose, coconut cream. Let thaw for 5-10 minutes for best experience.

1 cup pecans- soaked over night and dehydrated 48 hours
1/2 cup almonds soaked
1/4 cup macadamia nuts
2 tbsp coconut oil- split in 2
1 cup dates split in 2
1 coconut- water only
1 lemon- juiced
1 tbsp coconut nectar
3 tsp vanilla split in 3
1 tbsp Maca powder
dash of salt
Set aside about 12 dehydrated pecans for topping.
Crust- Mix 1/2 cup pecans, dates, 1 tsp vanilla in a food processor until evenly mixed and crust like. Place in the bottom of a pie pan and place in the freezer.
Filling- Mix 1/2 cup pecans, 1/2 cup almonds,1/2 cup dates, 1 tbsp coconut oil, 1 tsp vanilla, 1/4 cup coconut water, and 1 tbsp Maca powder together in a blender or food processor until smooth or desired consistency. Pour on top of crust and place back in freezer to harden.
Once hard, pop pie out of dish. Place pecans set aside earlier and place on top of pie.
Caramel- Blend 1/2 cup dates, coconut water, lemon juice, 1 tsp vanilla, dash of salt and macadamia nuts until smooth in a blender of food processor.
3 zucchini- sliced length-wise
1/4 cup cherry tomatoes- sliced
1/4 cup mushrooms- sliced and marinated:
2 tbsp olive oil
2 tbsp Coconut Aminos or Nom Shoyu
1/4 cup basil- sliced thin
1/2 cup almonds- soaked and de-skinned
1/2 cup pine nuts- soaked
1 tsp salt
1 tsp pepper
1 clove garlic
Put nuts, lemon juice, salt, pepper, and garlic into a blender or food processor and blend until smooth.
Start with zucchini and layer a tomato slice, a mushroom slice, and a dollop some nut cheese and basil. Roll ends of zucchini over and hold together with a tooth pic. Layer another tomato and mushroom slice for garnish. Enjoy!
